I just installed a 160 degree thermostat, flushed my system and added some Wetter Water. I now cruise at 176 degrees consistantly. Still heats up to 220-230 when standing still (until the fan kicks in anyway). My question is: Is 176 to cool to cruise at? The digital readout is 176 and the guage is at the 1st quarter mark. It's a 1992 LT-1 with 30k miles. Only mods are the TB bypass, Borla cat-back and the open K&N filter.
Mine also runs in that range this time of year, with a 160* 'stat. It's just fine that way. Gives you a lot more headroom with ECTs before Really Bad Things start to happen. Somebody posted some test data that indicated that the ideal operating temp with respect to cylinder wall wear is in the 175* to 180* range, so I think you're right where you want to be.

I be doin the same thing, except I gots a 180 fan temp sensor in the head ( it's an "84") I run 176-ish also
Someone on the forum once said something about "closed loop/open loop" I don't knit so I never had a problem
When I bought mine I noticed it ran a little on the cool side but when I smack it around a little bit I notice she jumps to over 220. Cools down quickly as I cruise around.
