Holley valve covers

It states
These cast aluminum valves covers these may be slightly taller than OEM, however they are not designed to work with roller style rocker arms.
My question is can I use stock valve covers with rollers. I wanted to do a roller rocker upgrade as a fun learning experience.

In answer to your question, if you put roller rocker arms on the 'drip rails' in the stock valve covers will hit the top of the roller rockers. You can grind off the drip rails (inside the covers) and the stock valve covers 'might' fit depending on the brand of rockers. I also had to use two valve cover gaskets as well as grind the drip rails to be able to run roller rockers. So yes, you can run roller rockers if you modify the valve covers slightly.
Modifying them is pretty simple, but you do have to mod them or they won't work.
I don't think the valve covers in the link even have drip rails so they may work as is, or you might need to use a double gasket to get enough clearence, but that's not a big deal.

Is your car the older perimeter style bolt pattern or the newer center bolt pattern OP?

they are a copy of GM 68-69 Z-28, 70-72 LT-1 covers and 73-82 Vette L82 covers you can buy them used cheaper then that. they would only work on pre 86 heads with the perimeter bolt pattern. they also sell a spacer to clear roller rockers or you could run thicker or double gaskets

Anything wrong with using plain old 3/8 X 24 Jam nuts on top of the OEM rocker nuts? They don't stick up as high as the top of the stud.

I used the adapters on the ZZ4 crate motor I had in my '69 Z28 clone. The engine had center bolt valve covers and just looked wrong in a muscle car. I bought a used pair of finned valve covers at a swap meet for $50, had a friend powder coat them, and bought a new badge, cap, and breather for them. They really set the engine off!
