I find it amusing that a passenger seat would have to be powered.
There's not a whole lot of movement in the first place.
Why not just leave it back?

I have ordered manual tracks to do this same project, power to manual seats. Is there anything I should know going into it? How simple is it to remove the wiring under the seats and the switches in the center console?

The swap is super simple. I left the wiring under the seat. It’s not in the way of anything. The switch wiring is more of a challenge to remove. I have not bothered with that yet.

Ok, well I'm gonna give it a shot removing the wiring and let y'all know how it goes. I'd like to take the switches out and put in a little cubby that someone else mentioned came stock in the manual seat car. May be hard to find!
