Yep and monitoring the fuel pressure as it dies as suggested would detect a similar situation. Sometimes just jiggling harnesses and wires in the engine bay can cause it to die and reveal the culprit.

So…
I ended up cleaning the IAC valve and whole throttle body. I also cleaned the injectors. I did the correct process of resetting the IAC position as well. Car has not crapped out in over a week regardless of driving conditions. Not sure what fixed it but I could have been the IAC connector, injector problem or the fact that the IAC valve was black with soot. I will continue to try an induce the problem but I think we found the problem! (Knock on wood lol!) thanks guys
