That date on the door is the month and year but not the actual date.
The date should be on the build sheet at least the julian date that the build sheet was printed thats the day that the build started or was put into production.
I think that may be completely wrong but Im pretty sure that the julian date is on the build sheet.
and you can buy that from the museum

I checked my build sheet and it says 91/165 which if I'm counting correctly says it was built June 14, 1991. The door sticker says 07/91. Does it take over 2 weeks to build?

JP is correct I believe.
Maybe/likely the Julian date is used for scheduling and puts components in the correct order for build. The build date is completion on the build line and assignment of "certificate of origin"!. I don't have the build sheet for mine and I've never looked at one closely. Something I need to get done I expect!
