Just picked up my 2003 Z with 19K miles on it for $25K out the door. Car looks and drives perfect! I still think I paid too much for it but I have no buyer's remorse at all. I had the money to do it.

I bought my 03 Torch Red Z06 with 30,000 miles for $25,000. Unless you plan on not driving the car, I wouldn't get too excited over it's lack of mileage. In fact it could turn out to be a bad thing if it was not stored properly.
Once the dealer has sat on the thing for a few months, they'll be begging you for your original offer. Let 'em sweat.

I wouldn't buy a 7 year old car with 2100 miles on it. Its out of warranty and most likely everything that was a warranty issue will happen to you except you will be footing the bill. Just because it has low miles doesn't mean anything except somebody wasted alot of money on garage art. Sounds like a maintenance nightmare to me. Why people pay 10's of thousands of dollars to buy a car and park it is beyond me. Its not like its a collectible.

I agree with the gentleman who urges you to not worry about a grand or two, if the car is as nice as you think and hope. I further agree with the other fellow who says that really nice low-mile C5s may be in a slump price-wise now but if the economy recovers they will be in demand in the future. The C5, particularly the sleek Coupe or Convertible, is a timeless shape to rival the C2 Coupes--C6 cannot hold a candle to the C5, looks-wise, and who knows about the C7?
That said, your car should be riding on its original tires, unworn. Otherwise you may be looking at a track car. Possible someone replaced them for age reasons but unlikely. Pull the codes of course before purchase, check underneath for scraping/jacking/lifting damage. Since you seem to already be a C5 owner I'm sure you know these things. Good luck and post back after things settle out.
