Clock Spring, can I find the center from going stop to stop?????
If I install a new column or want to add tele to my Z
Can I find the center of the airbag clock spring????

Looking at the manual I don't see where there are any stops in the column assembly. If you rotate the wheel too far you will damage the SIR coil assembly (Clockspring). So I guess the answer would be no.
Your best bet if the new column is not marked for alignment would be to install the column first and then install a new SIR coil assembly. They come with the assembly marked and aligned.

7 turns with shaft disco.
Rack can only turn 2.5 stop to stop
bunch of room from gm
just be at 3 turns from clock stop and you are good

Steve, I'm about to reconnect my steering shaft but I'm not 100% on where it was. Sounds like you were able to feel the ends of the clock spring without damaging it while the steering is decoupled and find the center. Let me know if that is correct.
