Keep your top down I'm 6'3" and have a vert
Before buying a C5 I tried a FRC, Z06, and a vert. With seat all the way down and back I just fit in all 3. But when driving if I hit any bumps in the FRC my head hit the support for the top. Not so in the Z06 or vert. Vert seemed the most headroom so thats what I got.
Pleanty of footroom without removing the dead pedal.

I am 6'6" and fit fine in my old 1976 coupe, but I went to the local dealership, ready to purchase a Z51 C7 coupe, and found I did not fit in the new C7 coupe. It had a glass roof which I though might give me enough room. However, I was looking straight at the horizontal windshield pillar so the visibility was terrible. I will just have to try an older Vette instead. Very disappointing!

6'7.5" \ 275# here…glass top and careful adjustment of the seat. Full down, tilt back then run it back as far as it goes.

I really want to buy a c5, but I haven't been able to fit my head in any of the car's I've sat in so far. I stretched my own Gurney bubble into the soft top of a convertible I tried, and the halo bar slammed into the back of my head on an 02 coupe. This is the only reference I've found to the ability to change that halo, what's involved, how much room does it give, and are there any limitations to what cars you can modify this way? I haven't found an 01 or earlier to try, but if I could get 2 inches of relief from that halo bar I'd buy a car in a second.

I'm 6'5" and sometimes I hit my head on the panel above my head. When I am parked too close to something and cant open my door all the way, its a bit of a challange getting in and out (usually when I am parking in the garage next to the wifes land cruiser) but it helps to have the window down. I'm going to look into an alarm that gives me the option to have the window roll up and down upon arming so it can always be easier. Unless its raining of course.
I'm a size 16 shoe but I actually love the dead pedal, helps me stay in place around the corners and it doesnt bother me a bit.
I just try to drive with the top off as much as I can and that makes it much easier!!!!
However, I still run into having a hard time seeing below the pillar at some stoplights, so if the top is off then I flip the visor down and just look over the top of the windshield.

The visor would definitely have to go, and I'm used to craning my neck to see overhead traffic lights in most cars anyhow, so I don't see that as a real issue.
I'm under 6'4", but long in the torso, so that halo bar is really the problem. I can live with my head against the glass top, but that bar was too much. I tried finding a schematic to see if the plastic could come off and give me any more room, but I haven't had luck yet. Understandably, the dealer was hesitant to let me just rip the liner out of the car he had for sale.

Damn, crazy tall folks in here. I'm 6'4", my son is 6'5" he and I fit a little better in my old C4, not sure if the glass top helped or not. I have not yet purchased a glass top for mine but have no issues.

I haven't tried the FRC, I had the impression from the forums that it had less headroom than the coupe. That also fits with my preference for a more open air experience.
