well i thing this era of Chevy used the 1.5 Din Radios. there are a few single din nav head units. not having nav wouldn't be a deal breaker just a fun in the sun sound system with the top down kinda verts.

as cool as gears would be i'd probably leave them alone or be very mild mod. i live in a town where there as much highway driving as street driving. but improving shift points sound like a good idea. as for the stall converter i am not sure about. ill have to pull a 550 pound loaded trailer to transport my power wheelchair. they aren't cheap to replace. i worry to aggressive of a gear change could put a lot of strain on the trailer and tie downs. the worst thing that could happen is that $15k+ power chair break lose and get totaled.

my dream car is a nice fun in the sun daily driver. daily driver is not saying much either. i only go out 1-2 times a week. maybe a 3rd time to keep it clean and sparkly.

Are you always going to have a trailer in tow? If so I would put all your money into convenience mods like your stereo and nav. Maximizing shift points and other performance stuff seems like it would not make much sense. Even the performance rear gears seem unnecessary as you would not want to go wot with a trailer and cargo behind.

Tracking the car might even worsen your condition.
Big HP is seen at higher RPM's during extreme driving.
The stock C5 has plenty of low end torque for spirited street driving.

i mainly was considering radio mods or stuff that enhance the drive without risking my power chair. the stock MX-5 i had was a lot of fun for me in the stock form. id be very leary of high end mods like gears, or cams. something like a power programmer for improved shift points or couple more mpg would be nice though.
