Have you tried contacting a dealer or other repair shop in your area for a quote? Labor rates can vary by quite a bit and are you sure the entire system needs to be replaced?

I paid a stealership in metro Detroit about $1500 for parts and labor last spring for a new compressor ($805 list price) but no other major parts were included. I knew I could get it cheaper elsewhere but I wanted to go with OEM parts.

You should be able to do all the underhood parts for around $800 in parts. Figure another 3-400 in labor. You start talking about replacing the AC coil in the dash, and you'll probably double that number. I would go independent garage, buy AC delco parts, Compressor, Condenser, new lines, drier, and you would be good to go.

If you are referring the the commonly serviced items: Compressor, accumulator and orifice tube (I would add a condenser), then you're in for about $400 in parts if you go with Delco stuff ($550-ish of you grab a condenser), labor is going to be tough to estimate, as I had my whole subframe out to weld a rack mount ear, and no mobile welders were available, so I did mine then, when the compressor is very easy to get to. If I had to throw a number, I'd say around $300, maybe $400 with the condenser.
