Default Temps all over the place

I don't think there's anything wrong with my 02 vert's cooling system. It's just something intrinsic to the C5.

If I run with the A/C on, I pretty much hang in there around 194 coolant temps, due to the radiator fans running all the time.

With it off, I creep up to 230 around town sitting at lights and stuff in traffic. The fans don't kick in until rather high temperatures - at least with factory programming in the PCM. Cruising around lightly above 30 mph seems to hold the temperature around the 194 mark.

So yesterday I'm out cruising in the mountains, top down, gorgeous day. Up and down hill and so on. My A/C is off, I notice that even though I'm maintaining good speed, the work of climbing hills and all cause my coolant temperature to creep up to 212-215 at times. Coming down hills for a while it dips down as low as 187.

This seems to be true of other C5's as well in similar driving, so I don't think anything is "broken" in the cooling system.

Still, it kind of concerns me all of the thermal cycling that is going on here. Just doesn't seem like a good idea. Though I can't imagine that Chevy would leave the programming in a state that was harmful for the engine. All of those expensive aluminum hunks under the hood though keep me thinking about it.

Any thoughts?

That is totally normal for a production car setup. High temps for emissions, totally safe for pressurized coolant.
