And if you don't want to spend too much on that size tires, get a set of Nitto Invos from Discount Tire Direct with free shipping.
And for a perfect fit for those tires, use the stock Z06 / GS wheel size:
Front: 18" x 9.5" (+40mm Offset)
Rear: 19" x 12" (+59mm Offset)

Here is a wheel offset calculator that you can use to find out how much the wheels will either stick out (or pull in) from the wheel wells if you change wheel sizes.

I used the stock rear wheel size as a base line (12" wide with +59mm offset)
If you use a new rear wheel that is 12.5" wide with a +53mm offset, the new wheel's inner clearance will remain the same as stock, but the outer lip of the new wheel will stick out 12mm further than stock. 12mm is not much (0.47") ... basically, a half an inch
You can check the same for the front wheel with this calculator
