Replacing the air dam
After 12-1/2 years and over 151,000 miles, I've decided that Red's front air dam originally designed to flex and scrape has really had better days. I remember reading some time ago that GM had discontinued making these replacement parts, but that a CF vendor (RPI) was making exact replacements. Last week I decided to buy the full 3-piece set, along with the mounting hardware. If i can get Red up on my BL5000 QuickJack this weekend, I'll try to slide my old bones under the nose and do the job. I haven't seen any good YouTube videos for replacing the C6 front air dam, but it appears that it'll be a simple small socket set job on about ten 7mm bolts.

I replaced mine about a month ago. Take your time and you won't have any trouble but it's not as simple as just unbolting the old and sticking in the new. I bought mine off of Amazon and it came with good instructions, I just followed them.

I don't think they are talking about the chin spoiler (splitter) that is in the video you posted.
They are talking about that vertical 3-piece air dam that is mounted below the car, about a foot to the rear of the chin spoiler.

And for me ... I am just thinking about removing it altogether.
There have been no reports of increased engine temps with the air dam completely removed.

I left the center section and have had the side wings removed for a couple years, and even down here in triple digits driving heavy on the skinny pedal, no issues with water temps or any other temps at all.

Replacing the center section is the most difficult, but not bad if you take your time and pay attention. The end winglets are a ten minute job, but you do need to replace the push pin that attaches the winglet to the center section. any auto parts store has these for about $2 for six.
