I am having my 08 coupes' driver seat and back re-upholstered. While the seat is out, what do I do to eliminate the false alerts on the DIC regarding seat belts and air bags?

Wait until you get your seat back,hook up the connectors under the seat, and all those alarms ln the DIC will be gone.
There is nothing you can do to bypass those alarms, that is worth it for that short time frame. Since it is the driver seat, how could you drive the car anyway?
Yep, since on every car start, BCM does a quick check of the system, and what will cause the faults. Once the seats are back in, and the next start up, car will see that the faults are resolved, and not post them as an active fault instead. The faults will be in history still for X amounts of start ups, and still not a fault after X amount of start ups, will be cleared from history as well.
If you want to clean the faults in history before the set amount of start ups before they are self erased, then will take a Tech II tool to clear those saved history faults.
