Hey all, I have a 2007 C6 base model and was looking to replace the stock stereo with an aftermarket bluetooth and Apple Play capable one. I've seen some double din stereos offered from Crutchfield that look good but was not sure about the install. I want it to mount flush (look stock) and not protrude from the dash. If anyone has any suggestions or pics of theirs it would be greatly appreciated.

It depends on the model. Some that have tilting screen or screens that fold open to access a CD slot, will stick out more. If CD is not important to you, look at one of the multimedia (no cd player) units. Pioneer has some units without any protruding buttons, all touchscreen. And some Sony units have a matte black finish which gives it a more stock appearance compared to some other brands.
I installed a Kenwood DMX906S (now updated) with front and rear cams - great upgrade. Crutchfield has a PAC and pre-wire service so it was plug and play.

I have a Kenwood DMX8906S with the two cameras, and I agree. It was an awesome upgrade!!
I have the JVC stereo with car play from Crutchfield, and it looks great. I wanted the Kenwood but could not wait for it to be in stock. I don’t regret it because it sounds awesome. I also replace the door and rear speakers and installed an amp. The instructions were clear and easy to install. I did a ton of reading on forums and watched videos on YouTube. Go for it.
I put in a Pioneer AVH-4400NEX w/ wireless Apple CarPlay. Crutchfield said it wouldn't fit but all it required was shaving the top of the bezel a bit to allow the screen to flip w/o catching on the bezel. IMO it doesn't stick out more than the stock head unit. I strongly recommend wireless CarPlay - you get all the functionality w/o having to hook up the phone each time. No wires.
On a side note, I pulled the power outlet in the center console and swapped it out with a USB connection. That gives me a connection for charging or USB updates if needed.
