60k Stock LS7
So my car is a 2006 Z06 with an Edelbrock E-Force supercharger on it. It has been supercharged for about the last 10k with it now having just a little over 60 thousand miles on it. As far as I know the heads have never been off or fixed. My question is with so many miles on the stock heads is it likely that it doesn't have the valve problems some engines do or am I just lucky it hasn't happened yet? I am about to take the car on a 3k mile road trip and want some assurance that i shouldn't be too worried? Any opinions are welcome.

Unknown, however, it seems as though most (all?) of the broken valve stem LS7s have been on cars with <30k miles on them. My motor has 70k miles on it, untouched heads. I'm taking it to Cordes Peformance Racing here in the Phoenix area, and I'll probably have him do a measurement on the heads, even though I'm having them swapped out for ported WCCH heads. If for no other reason than a data point for others.
It might be the case that if your motor lasts longer than X number of miles, you were one of the lucky ones that for whatever reason, had properly machined heads.

Agreed. You are probably okay with that many miles on the car. When the time comes to refresh the valve train. That will obviously be something that you would have checked. Enjoy your trip!

Some cars are just worse than others; but all guides will eventually wear at various rates depending on the variables. Since you've gone already 60K miles to date, I'd say the likelihood you can do another 3K is pretty good...but if you're looking for reassurance, the best way is to inspect. Either way, bets of luck and enjoy the trip!
