I'd do a couple things first. Top engine cleaner - either the GM stuff or Techron by Chevron. Both have Techron cleaner, that stuff works great at cleaning carbon out of the chambers. I've had many vehicles that start to knock too much until I run a tank full of cleaner through.
Change the oil after doing that.
Still feeling a bit flat, I'd change the plugs back to stock plugs at stock gap. I've seen weird things from experimenting with different plugs.
In the heat of the south, I'd change to a 160 stat.
Now you've ruled out - carbon, plugs, and the hot stock stat. Still feels a little flat, take up LG's offer and have his shop tune it and take a look.
That stock LS2 cam is really on the mild side. If it still isn't exciting enough after the tuning is straightened out, a nice mild cam should do the trick. LG can recommend a nice one.
