Any tips on the best way to replace my clutch for a 2005 C6. I have the factory service manual and it seems extremely complex. Dropping the rear suspension and then the transaxle etc. Is this easier than it sounds?

Easiest way.....take it to a shop. It will be a PITA with out a lift.

If you have a lift and a heavy duty trans jack, it is not that hard. I rebuilt my 6mn in my C5 when I was 62. It also helps if you have a 30 year old son that shows up just in time to help get everything on the ground once you have it all unbolted. He also was there when I got ready to lift it back into the car. I didn't change the clutch at the time, but it would have been easy to get to with everything else out of the way. I found that if you take your time and have the right tools the Vette is very easy to work on.

It also helps to check the forum for how to writeups with pictures. They helped me a lot.
I saved over $1500 by doing this myself.
