Thermostat for ls2 c6
Is it advisable to change to a 160 degree thermostat in California. Currently running stock one and I am running at about 210 degrees in traffic.

No, 160 thermostat only helps in some drag racing applications. And there are many feelings, both pro and con, about using a 160.
When I first got my C6 (08, back in 2013) I too was worried about the high op temp. But I found that this is "normal". I think to save weight the Corvette uses an undersized radiator and relies on electric fans to keep the temperature down when in traffic. Mine typically goes to 210 - 220 when in summer traffic. The fans are just working overtime. When under way, you will see the temp fall to 194 or so, when the stock 186 degree thermostat is installed.

It doesn't matter what T-stat you are using in traffic. What matters is what temp your fan is programed to turn on. This can be set with a programmer, Diablosport, HP tuners etc. But those temps are normal for the OEM program.

drain, refill with 1 1/2 bottle "water wetter" 2 gallons distilled water and the rest dexcool put the "wetter in first so it's in t6he , motor/radiator you will be fine in winter and your temps will go down, I run a 180 t-stat
