How aggressive are you wanted to get? What size wheel/tire? Is this your daily or just a weekend toy?

Your tire width restriction does make things a lot more difficult. I would think you would need a 15 with a 275 to really hook up. No suspension components could compensate for your traction needs at that power level. It may help but won't solve your woes. A 15" wheel with a set of Hoosier or MT DRs would really get your power to the ground better. Some adjustable shocks and sway bar would be a nice complement to the setup. I don't personally think the full coilovers are necessary but others may feel differently. I've just seen too many cars with a 17" wheel on hoosier 335's on stock suspension run sub 1.4 60fts.

I have no experience drag racing a corvette (yet) will know more about it soon I found the rear needs a lot of tweaking too much squat with stock suspension so went coil over 550 lbs springs 450 fronts pinned the rear lower control arm bushings to keep them from compressing and waiting on a set of BC light weight 11.5 x 17 wheels and 8.5 x 18 fronts just to get my bragging wrights straight getting 315 35 17 Hoosiers can't tell you what's going to happen but hope for the best, tire wheel combo is intended street strip ditching my CCW drag pack don't want to change wheels at the end of the day anymore.

I have a Z06. I'm not sure how big you can go.

That 11 inch wheel is too wide for a 275 tire to get the best traction, you should try switching to a 315.

275 is more than enough tire for that power level.

Stiffer shocks seem to hurt more than help. I would get a set of viking DAs that you can dial in. I noticed a huge difference going from z06 to DRM to vikings. The stiffer the shock, the worse it hooks off the line.

Has Viking improved their QC practices in recent years?

I would have no idea. Got 4 friends now, and all my cars have them and zero issues. Never seen a quality issue with them, and I don't work for them, so no way to answer that.

I'm not sure if they will with base fenders, I would think if you got the right back spacing it would be fine.

Throw a 315/35/17 hoosier dr2 on that 11" wheel. I ran 315s on a widened wheel and it barely rubbed with my lowering bolts all the way down. If it was just ran at the track itd be no issue.
