What's your temp on an open road? 198° is where mine sits. If you get only 197 in traffic that is unusual.

use the least amount of antifreeze as you can, add redlines waterwetter and top off with distilled water and/or get a Dewitts radiator, going down the highway 100 degree day I can't get it over 174 degrees, sitting traffic same day goes 200 but as soon as the fans come on boom 180 but 197 not bad you just have to get used to seeing temps like that 220 it still doesn't boil over. with the oil cooler I droped oil temps by 20 degrees

197* is about right, the car is not overheating but may be low on coolant hence the reason you are getting a warning

Correct, C6's don't have a level sensor. It supposedly use some sort of logic for what the ECT does to know if coolant is too low but I don't see how

C6 of Year Finalist (performance mods) 2019
According to the SM, the "CHECK COOLANT LEVEL" message is an algorithm that measures the difference in ECT over time as a function of engine speed. Upon start-up the ECM sends RPM and ECT messages through the BCM to the HVAC control module, which determines if an increase in ECT is due to a low coolant condition.
Knowing that the HVAC is making that call, I'd be inclined to change some of the settings or just turn it totally off at shut-down to see if the message goes away upon start-up or at any other time.
If the OP never returns, we may never know anymore for future reference.

Melting Slicks
I had the same message on my dash just last week, mine kept coming on then another message saying engine hot turning off a/c. I thought my engine was about to blow up lol.
After I got it home I checked the coolant and everything looked fine, no boiling over or anything. So I read in another post on here that it could be a bad coolant sensor, sure enough the wire connector to that sensor had broken off and that was the cause off all the false readings. I got a new sensor and plug connector from Orileys, all is good.
