5 quarts for non-Z51. 5.5 quarts for Z51 I believe.
May want to crack open the manual. All these questions are answered in there. The vast majority here are willing and able to help, but sometimes you may want to do your own reading.

It's 5.5 quarts. 5W30 is specified.
I just changed the oil in the 2005 I maintain. I used Pennzoil Platinum High Mileage. Mobil 1 "annual protection" should be fine as well. Look for something that meets (or exceeds) GM 6094M specification. That's the spec that was in place when the vehicle/engine was manufactured.
Beware weasel words like "recommended by (oil marketer) for GM 6094M applications." That's weasel words for, "This doesn't actually meet the spec, but we think it might be good enough to work." It's not quite what the OLMS is tuned to.

I run the Napa Platinum 41042.
You'll get varying opinions on this.
I've never had problems with Wix, Napa or CarQuest filters (all made to the same specs in the same factories). IMO, they are at least as good as AC-Delco (probably better, actually). Use at least the gold with synthetic oil/extended oil change intervals with the OLMS. I prefer the platinum for those applications.

To ask questions that go above and beyond the user manual. If you lost your user manual, I get it. But you can find a digital copy of it online in about 2.5 seconds. For something so basic as oil capacity, I didn't think a forum was required. (Call me crazy.)
I come here looking for real-world experience regarding parts, vendors, and installation of items that is not covered in manufacturer documentation such as user manuals.
Do you not trust the user manual that came with you car?

Come on. There's much more valuable information on Corvette Forum than just discussions of detailing supplies.
There's "Why did they move the cruise control buttons?" and the ever popular "Can I tow my boat (/snowmobile/farm tractor) with my Corvette?" That "valuable information" isn't found just anywhere.
PS. That's just from the last week, and I'm completely leaving out CFOT and PRC.
