Most OEMs say keep it at lower RPM's (under ~3k) until 160F. I would recommend 180F as a minimum before any kind of racing with the factory oil weight. With heavier weight oil, let it get a bit hotter by gradually increasing shift points.

To summarize, anywhere between 150-185* unless you are a maniac and then you can go as low as a 100*.

I have a 10 C6 GS. I usually wait until 130+, which already takes forever to reach in Ohio. I rarely see 175+.

That's normal with a dry sump system. Trying to heat up 10.5 quarts that has lots of cooling capacity in cool/cold weather takes a loooong time at 3000 rpm or less.
Your mods look more like a cruiser, than an occasional track or drag car, so you might consider using the standard LS3 bypass or an oil t-stat for the cooler.

Same. In most cars I've had, all I know is the water temp, so I would wait 5 minutes beyond when the normal operating water temp was achieved on normal day or 10 minutes in the winter.

I'm not afraid to get on the vette if the temp is about 120* or higher if I need the power to pass. I will wait until it passes 140*, which is easy to see on the HUD, for joy riding purposes.

I've always waited for 150F oil temp and on a cool day that can take 20 minutes or more. I'm really looking forward to getting those 10.5 quarts of oil up to temp faster. Although I do flog the car in the mountains on weekends it's a daily driver and I've been spending way too much time ***** footing around waiting for the oil to heat up.
