I'm not an iGuy so I can only speak from AA. With AA the sound goes through the USB connection - not bluetooth. With AA I use Google Maps. Google Maps then displays on the Infotainment screen, which is nice. There's a button there for the speaker with a line through it. Normally I don't want the voice interrupting my media (podcast, music, whatever). If I hit that button then the voice will interrupt whatever is going to the speakers and give voice instructions. I generally don't put that on unless I'm on the highway for a long distance and want to be alerted by the voice prompt for an upcoming turn.
I would only assume the Apple's CarPlay works similarly in that it must be connected via USB, displays onto the Infotainment screen and will interrupt whatever is playing on the speakers IFF voice prompts are activated in Apple Maps (Remember I'm not an iGuy so I don't know the capabilities of Apple Maps).

I agree, however, for me, the reason I love Waze is because of the usually very accurate police, stopped vehicle and accident alerts (despite the ads and generally silly appearance of the GUI)
