To get a Porsche or a Jag with the same performance you'll spend a good bit more money.
Unless BMW comes out with a M roadster, their current M cars are four or more seaters. The top Z4 is only 335 hp, if they built the M roadster it could be in the running for C7 dollars. If the price tag doesn't go over the top.
For the money, it's hard to find something that looks as good, and performs as well as the C7.
I cross shopped the f-type jag. No manual for the v8 was the deal breaker.
It's natural competition is the porsche 911. However, the cayman is one hell of a sports car too. If you can live without the power, it is a good option.
Another rival in sales will be the BMW m2, 3, and 4. These bmw's have 4 seats, but so do the cars mentioned in the OP.
I would say that the Vette's first and only true nemesis is the Porsche 911. These two have been slugging it out for 50+ years in the sports car category.

$ to $ there is nothing in the same category, the Camaro and Mustang, while offering similar straight line performance can't top the Corvette on the track (the Z28 or 350R perhaps but cost more).
On track performance, excluding import taxes, Z51/GS > GT4
Z06 > GT3 (GT3 has the advantage on track durability)
Base 911's on a good day > may be Base Stingray
Test road a 2016 Carrera GTS on track, very disappointed in how fat and lazy it felt (Cayman GTS on track actually was much more agile and sharper).
Test road an older GT3, very sharp and impressive handling.
Test road a Z51, impressed with handling, not as sharp as GT3 in steering input, but the delta was very little, for the price increase.
Very much looking forward to my M7 GS, currently at status 3000!
From what I remember the 911 was the car they bench marked the C7 against as it is the main competitor. You can't really compare the 4 door cars to the Vette IMO.
I love how 911s (actually caymans even more so) drive despite their subtle and way too similar styling. However they are indeed a lot more money for equivalent performance and the turbocharging on the new lineup really ruined things for me.
I test drove most of these things named above and many more, never found anything at the level of performance of a GS at that price point with all the options I wanted (daily driver, so I 3LT'd it). A few Z51 test drives (and a z06 one) sealed the deal for me.
When I was in the buying market, my final choices were the Porsche Cayman S and the Jaguar F-Type-even a Maserati GT.
I chose Corvette because I'm not a huge fan of the Porsche styling. Driving-wise, it was a great car, but expensive and I have always had to talk myself into liking the looks of the Porsche.
The F-Type was nice, but tight within the cabin. The drive was nice, but non-descript.
Even when my wife, who isn't a car person saw the Corvette, she said to get it. And she was REALLY pulling for the Porsche.

But why isn't the Viper included in the discussion? Isn't it designed as a direct competitor to the Z06? The Ford GT should probably be included too, though it's priced out of range (as are a bunch of other contenders).
I had an F-Type convertible and loved it. It was flawless and a blast to drive. However, no matter how hard I tried, I couldn't love the ZF8 automatic as good as it was, so now I'm in a C7 Z51 7MT convertible .

I have never considered the Camaro, Challenger, and Mustang as competitors to the Corvette. The Corvette is a two seat sports car, the others are four seat pony cars. I view them as gateway cars to a sports car.
