i am touring the states for a month this year (with the boss) how much luggage space is there with the top in the trunk?

While there is room under the roof when secured in the hatch, there isn't much. Maybe 8" of height; more or less. A small suitcase and duffle bags should fit. There is also some space above and in front it, but not a lot.

I find that with the Corvette luggage I can fit all bags as long as I do not over stuff, aka limit the boss to three pair of shoes, etc.

We have taken lots of trips in our C7 coupe with the longest for 17 days last summer with around 4000 miles to the East coast of Canada and the US. With the targa top in place the room is limited, so we got the custom luggage from WRB inc, in Gun Barrel Texas which offers 5 pieces of luggage for the C7 so you can put the targa top stored in the back and all the luggage is covered. Very high quality luggage and they will monogram the luggage also. Each piece is around $60.

People at WRB are great to deal with and delivery is about 3 weeks.
We also have the Rear Bumper Fascia GM part number19132516 that protects the Spoiler when removing luggage from the rear and folds up or lays flat on the targa top.
We have put light things on top of the targa top if needed with the cover on and a heavy towel for protection.
Packing light and lots of quick drying clothing helps a lot.
If you have luggage that can be compressed, then this may work as hard luggage is harder to fit in
