Limerock green and the C7 is what got me into corvettes. When got around to finally getting one, Limerock was nowhere to be found..... So got Torch Red with Kalahari and love the way it looks. Better half and I just went on our first Club cruise today. Good folks and times (Amazing Corvettes, Atlanta)
I have owned this Arctic White C7 since 2014. I believe the Arctic White with black wheels, red calipers, and red interiors is the best color combination. I just bought/ordered a '19 Watkins Glen Gray GS today.
Love a white Corvette, pretty much any year or generation and a reason I went with Arctic White with the C7 along with its predecessor. The contrasts with the white just seem to accentuate the lines of the C7, even better than previous generations. As mentioned, most of the time one's favorite color is the one they bought but I admit I have a different preference...
Was NOT a fan of the C7 when the initial pictures/previews came out. My opinion softened a bit when I saw my 1st one in person, a Lime Rock Green Metallic convertible with kalahari interior. Have to say that if it was still offered and in a Z06, that's likely what I would have held out for despite my affinity for white. To me, it's one of the best colors I've ever seen...
Probably most, however I'd bet quite a few C7 owners purchased other colors than their favorite for any number of reasons. For example, mine is Daytona Sunrise Orange, however it wasn't offered for my '17 GS.
I expect some don't get their preferred color as a result of finding another color on a lot that's more affordable, or has more of the other features they prefer etc.

When I took the Plant Tour in April last year the most popular colors according the tour guide was 1st White then 2nd Black and 3rd Torch Red in that order of colors. Just saying.
In 1976, when I bought my 1st Corvette a new 1977, the Chev. dealer in Wahoo, Nebraska had (15) new Corvettes, ALL the same color - Metallic Silver Blue. I got one of 'em. I had seen two Arctic Whites at 2 other Chev. dealers, but we couldn't come together on price.
Fast Fwd. 41 years, I found an Arctic White new 2017 C7 convertible in-stock, where we did come together on the price........ <<<<<<<<<see avatar!

Even though it's a discontinued color, a special shout out to Night Race Blue. This was the first C7 I saw out on I-696 back in mid-2014. I knew at some point I had to own this vehicle once I saw it flying down the freeway. Fast forward about 3 years later, it was in that exact same spot I saw a Dodge Challenger try to show off in front of my newly purchased Grand Sport, only to get pulled over 2 miles later.

I've always liked dark red and my C5 and C6 were Magnetic Red and Monterey Red, two of my favorites. I looked at a similar color for a C7, didn't quite like the color. so when I got a great offer on a silver one I went for it. And I'm happier with it than I thought I might be. It's a bit more subdued than a red but with the lines of the C7 it still looks great.
I had wanted a Corvette for a long time. When I saw the Laguna Blue on the C7, I had to have it. By the time I was ready to actually get one (better yet, when the wife was finally on board), admiral blue was out and I was sold. I picked up my Admiral Blue last June and haven't regretted it once.
That being said, I haven't seen a color I don't like. Typically, I am not a big white car fan, but AW looks stunning on the C7. Silver...awesome. Black.....heck yeah. A Torch Red Grand sport. Oh My.....I could go on. This is the car that I see driving down the road and I get excited. That's even when I am driving my own.
Of all the available colors right now, Torch Red is my favorite and has been for several years. My 2018 is Torch Red and so was my 1995. But if the day ever comes where GM decides to reintroduce Elkhart Green then my Torch Red 2018 will be officially on borrowed time.
