All the labor (except paint) was done by me and my pops, so we saved a bunch there. About 10 hours of labor between the two of us spread over a few weekends, though it probably would have gone faster if we hadn't stopped to take pics, admire our work, etc.

Le Mans Master
Squirted a little GooGone in the top gap between the fish and the body panel and let it soak in for a few mins. Then carefully used a plastic trim tool to slowly pry/nudge the top edge away just a little at time from the fender. A little more GooGone in the gap, a little more gentle prying/pulling with fingers and it came off. Pick the remaining foam bits away with your fingers, and finish by generous amounts of GooGone and paper towels to remove the remnants of adhesive that remain. Took about 10-15 mins per fish. Take your time and don't try to just yank it off or use excessive prying force, and it will come off with no damage to the fender whatsoever.
Some people use fishing line or dental floss to 'saw' through the foam adhesive, but this method works a bit easier for me.

About $3700 for Z06 panels, paint, carbon fiber bits, and wheels and tires, and this is after I sold the old wheels/tires and some of the take-off body panels.

The badge is history, homage to the past. Generations of corvettes went by with no Stingray. They brought it back with the C7, and you want to take it off? Sacrilege, I say. These other corvettes are just numbers. Z06, Z51, ZR1. Good Lord, how uninspiring. Just string any old letters together with a Z in the front to make it sound cool. Just like Acura. Cool name. Acura Legend. Cool car for its time, so what dd they do? Rename it the "RL" which means absolutely nothing. These guys want their cars to be anonymous so they neuter them with stupid name. Stingray means something. It's named after a real thing. Z51? Gawk! It's a nothing name.

I'm thinking the last Stingray was in the 1976 model year.

Absolutely right. The C2 plus half the C3 were Sting Ray or Stingray. In 1977 the name disappeared and did not come back until the C7.

I'm probably in the minority here, but I've never been a fan of the "fish". It has nothing to do with Corvette 'heritage'.
The 'fish' was never used on a Corvette in the past. The first time I remember seeing it, was on the Transformers movie car...
OK, they decided to bring back the "Stingray" moniker, but I don't see a lot of C2 or C3 dna there...
I've seen a few guys that have taken off the 'fish' and installed the old school C3 script. I may decide to go that way...
