So, it has been suggested I use my convertible in a parade and park a 120 pound model on the tonneau cover. Can the cover handle her skinny butt, or will this break something?

The cover can handle the weight. There are three problems: Two are safety issues. 1). Models usually wear some sort of clothing that slides easily against solid waxed surfaces. The first thing you need to do is to make sure it is less likely to fall off the car and get injured. I found buying a cheap non slip bathroom carpet at a local superstore will provide enough grip to keep her on the car while protecting the finish at the same time. 2). The second problem is making sure she doesn't twist an ankle trying to stand on the seat while getting into position. 3). The third problem is a variation of the second one and relates to protecting your car seat. The models will typically be wearing high heel shoes so you want to make sure they remove them as the step into the car and before they step on the seat. The next thing you need is to provide a hard surface for them to stand on instead of the seat cushion. I found a section of board cut to fit between the edges of the seat cushion distributes the weight better and provides a little more stability for somebody to stand on the seat and turn around to sit on the tonneau cover. I made mine from a piece of 2x8 wrapped in heavy duty paper. I found this stuff out when I participated in my first high school home coming parade with young girls sitting on the tonneau or on the roof halo of a T Type car. I had taken care of the seat issue so she got up on the roof halo followed by her date placing the board on the floor and sitting in the seat. Then I let the clutch out and as soon as the car started moving she started sliding across the halo. I had her date grab her legs and hold her in place until we finished driving the quarter mile into the football stadium where they got out of the car. Even going around a turn at 3 or 4 mph generated enough G force to make her slide. From then on my standard parade issue was the carpet and the board.
