Interior cleaning and detailing
I'm the proud new owner of a 2015 Z06. Obviously, I want to keep this baby in pristine in perfect condition. Does anyone have any suggestions for technique or products for cleaning and detailing the interior, especially since it has so many leather surfaces?

Drifting
Warm water and some Murphy oil soap. Leaves a real light luster. It's all I ever use on the whole interior and has a great smell. Leaves the leather looking fab.

Well I wouldn't call it "plastic" but yes a protective coating...but anyone that believes leather (real leather) doesn't need cleaning AND conditioning is a fool...and probably the ones with cracked / ripped seats, dashboards stretching, bolsters that are worn, etc etc.
I have had a few C4's, a C5, a C6 and a C7 and cleaned and conditioned ALL of them and not one has had a worn leather area, a rip, or anything...and I use only this product. Am I lucky? Maybe - but since my leather interiors have been flawless and issue-free - I guess Ill have to believe its the product Im using...

Trying to compare a car that is 30+ years old with a newish one is silly. The materials are not the same, nor is the way you need to care for it.
Our C6 and C7 leather seats do come with a plastic coating, plain and simple! It is UV treated.
A damp cloth is all that is needed, unless you are attempting to clean a stain/spill. If actually "cleaning," then a mild soap solution is all that is needed, followed up with a clean damp cloth.
Using a "protective/ conditioner" is likely to cause more harm than do good. Like dissolves like, and the fact that a plastic coating is applied means that none of the 'conditioning" is ever going to get to the leather...until that coating is broken down, resulting in a cracked surface. Think about it.

Just thinking out loud...I wonder if all the owners of 3LT dashboards (which I have) that seem to be pulling apart were maintained with soap and water?? Maybe since soap and water dries out human skin...do you think it just might dry out leather (which is animal skin)? Maybe it's getting dry and brittle and pulling apart? Hmmmmm...my 3LT dash has zero issues...and I use Meguiars all the time...it does make me wonder if that so called "plastic" is BS...
But...to each their own.

Yes, Woodson is exactly correct = Stay away from any chemicals!!!!! I've never needed anything except a damp cloth (water only) to clean any interior (except for maybe the carpets if they ever got tar or whatever on them).
