Recommended car dollies that fit our cars?
So I'm about to ship the 1-of-1 "Corvette Powered Pontiac" down from Canada:

...when it arrives I need to be able to move it around the shop and so on and I was wondering about those car "dollies" you put under the wheels. Some allow you to lift the car with them, that's not a big deal for me, I'm OK with lifting the car first if I have to, as I won't use them that often.
But ideally, I'd like something that'd work for this jackpot of a car as well as for the Z, which might be a tall order.
I also have a textured floor, not smooth, so low rolling resistance is a big plus for me. Some have wheels, some have *****, I'm not sure which is best. Hence the question!

Summit Racing has all kinds of them. Figure out how wide you need to fit the tire and go from there. I use the GoJak 4520 for the Z because the rear tires are so wide.

For moving a lightweight body you might just want the ones you have to jack the car up to set it on them..
I went ahead and bought a couple of hydraulic ones just so I could rotate tires without having to lift the wheel and tire to line up the lugs, but that is probably not important to you...
Here are the ones I got...
Note, they do come in different widths, so make sure you get ones for at least 12 inches, maybe the 20 inch model since the Z rear tires may be a little wider.
You are right that you need to get a dolly with good caster bearings. I have read about some from Harbor Freight that would not roll with the weight of the car on them.
The brand I got is Capri Tools.

I've been using a set of dollies from http://www.car-dolly.com/ for years. They roll much easier than the cheap HF ones. I can push my car across the 1/5" wide expansion gap in my garage floor by myself. They're made right here in Michigan and have good ball bearing casters.

I wound up going with these. They seem high quality, rated 6000lbs, got them on Amazon. If I were doing it more frequently I would have considered the kind with the jack built in, but this is a pretty uncommon maneuver for me.
