I strictly roll race on my m7 z51 making 700rwhp. I'm running toyo r888 at 20psi but 40-50 rolls are still not happing without spin and starting in 3rd kills me .
Traction off is not even an option
Should I get a different tire , et street , nt05r for a 20"
Or should I just get an 18" wheel with those tire options.. I know for a dog an 18" would be ideal but I only roll , so would that make a difference

I see a lot of roll racers running ET streets with a smaller wheel.

This is true I do more roll racing than digs. I run a Weld 17x111 with a 315 ET Street R.
