Because they NEED to SELL cars. They are not looking to sell 5000 Z28s/year so they can price it at 100k as far as Im concerned. Camaro folks will pay for it anyways so....

GM is really driving the phrase "Z06 Supercar" lately. My hunch is they're looking to have the new Z06 replace the ZR1 altogether, and they're going to have the starting price very close to the GTR Premium edition - ~$110,000. All speculation of course...but after the reveal on Monday I think we can all better assess what MSRP might be based on what this bad boy is going to come stock with.
The C6 Z06 had supercar performance at the time but it wasn't considered one because it fell short in other critical areas, which the C7 has addressed. The C7 has already significantly changed the Corvette perception and the Z will enhance that perception even more. The C7 Z should be promoted as more than just a hi-po Corvette; it is a supercar.
I don't think the base price will as high as the GTR Premium but GM can still increase the price and sell more than they ever have because the desirability will reach people that would have never considered a Corvette before.
Some people only discuss price in relation to people that have bought or typically considered Corvettes in the past without any evaluation of a much wider demographic that never even considered Corvettes in the past. The market for the C7 Z is many times bigger than past generations because the pool of desirability is open to many more people.

Well there seems to be a lot of crazies willing to drop $120k on a '14 Track Pack GTR that doesnt even have CC brakes or a proper engine/diff/tranny cooling so I would go out and a limb and say there will be enough crazies willing to drop $75k on a Camaro.

The issue had less to do with the market and more to do with the product. Produce a high quality product and keep it fresh and relevant and a lot of that goes away.
