Once I got a comfortable line at the end of day 1, the car would overheat at half session (25 min sessions). Day 2 was all half sessions. 253 water, 297 oil. Car was noticeably down on power 1.5 laps after the tires were at full grip. You can really tell going up bridge straight.

I know that if the coolant and such isn't bled properly and there's air bubbles in the system, your coolant heats up ridiculously quick and cuts power even though the car isn't overheating.

Check to see if everything is bled properly. I've seen a stock Z06s run ok in 95 degree weather at The Ridge (granted it was pulling power, but it was much hotter and that car was bone stock with no extra cooling).
