Check Lockton.com A full 2-day weekend event at Road Atlanta is usually $600 or so for my car. It is based on a few things such as your declared value and 10/15% deductible selected. I don't think a single day just cuts the policy in 1/2 though.
Ontrackinsurance is another source that has good reviews and is usually slightly cheaper.
Fortunately, I've never had a claim to know how easy either are to work with when needed.
Another point of reference - back in 2015 I insured my 71 for Road Atlanta for a Chin event with I think 30 or 40k in declared value and it was only $282 for the weekend. Unfortunately that car is now about as expensive as the Z06...

Check with RLI Track Day Insurance

I have used RLI several times and have found them to be more cost effective than others. I understand from discussions with RLI that they were previously the underwriter for Lockton.
I just ran a quote with RLI for an upcoming 2-day Chin event at Road Atlanta. Quote was $454 for $75K coverage and 10% deductible (deductible caps at $6K). RLI also offers a 15% deductible, but I don't believe the premium savings warrant the higher deductible.

Just FYI. I considered purchasing track insurance. Be sure to read the fine print on on any of it. There were several loop holes in the policy for not covering a claim. One was you were only covered " if " you had an instructor in your car at the time. And you had to be in the novice class where there was NO passing. Things like that. Pretty much just parade type laps.

Lockton are great. Rates for me and my son for a two day PCA etc HPDE weekend is around $500. This is with a 10% deductible on agreed value of $85,000. There are no restrictions re: run group etc.

Lockton also now covers a number of Time Trial/Attack events, which previously were off limits to all insurance companies.

RLI doesn't upcharge for a second day. I was surprised but the price of a single day or two in a row was identical.

First thing is you need to see if the event is even covered by the insurer. You can check LocktonMotorsports by going to their web page and searching on events at Road Atlanta. From now until the end of the year I only see a couple of single day events.
jZILLA Track Days in September

Just Track It in December
To see if Lockton would cover it you would have to call them. I have had them add specific combinations so a better rate could be realized. Two years ago I was doing a 3 day BMW weekend event at VIR followed by a 2 day NCM event. Lockton was covering both events but the price was pretty high so I called and they put together a package 5 day deal that saved some money on the insurance cost. It showed up on their web site a day after I called them.
Check with the other suppliers to see what events they are covering.
Lockton rules are they will cover anything that happens to your car while you are on track up to the value you are insuring the car for minus the deductible. They also exclude owners who have had a previous claim. I had an incident at that 2015 NCM event where I lost a left front wheel on my C6Z while going through Turn 1. I had the car insured for $48K and the initial damage estimate came in at $6300 (which included $2300 for a new fender that happened to not be available anywhere in the country) the deductible would have been $4800 so I could have collected $1500 to cover the damage. When I talked to Lockton they had no problem paying the amount but the owner reminded me about the previous claim policy and asked whether I wanted $1500 or the ability to insure the car at my next event. I decided to work with the body shop and through some on line searching I found a surplus auto parts store that had old part number NOS C6Z carbon fiber front fenders still in unopened boxes. Price shipped to me was $1100. So the total cost of the repair dropped to $5100 which made it palatable not to make an insurance claim for a few hundred dollars.
