I think the ZR 1 is a great car, but it's kind of the last hurrah for the C7 platform. I will keep my Z06 until the Z06 variant of the mid engine comes out. I did the same with my C6 Z. Never got the itch for the C6 ZR1 , and glad I waited for the C7 Z06.
I'm sure I will be glad I waited this time around as well.

The mid-engined Corvette will certainly be cool and different, but who's to say whether it will actually outperform the C7 Z06? Lots of mid-engine cars don't.

I'm confident the next generation Z will be an improvement in every way. Every Corvette generation has been a performance improvement over the previous. I love the current Z and how it stacks up against everything, including mid engine supercars. I can't imagine the next gen, mid engine Z being less of a performer.

Not a fan of the looks. Looks like some kind of bird from the front. A pelican maybe. Also the big wing... and big hood. Haven’t seen one in person but the only thing that intrigues me is the power and that can be matched pretty easily with the C7Z

My feeling on the ZR1 is that I'd be spending nearly $50k more than I did on my Z06 only to have a car that turns a lap a couple seconds faster in expert hands. I don't see it changing my track day experience. It definitely won't change my street driving experience. So the $50k premium equates only to my own ego of having and showing off a ZR1. Most people in my town yawn at Corvettes, Bentleys and any AMG Merc or P-car. Even a Ferrari that isn't an immediately released model is common place. So I'm not turning any heads with a ZR1.
Ultimately I decided I'd rather spend my coin on family boat, a Tahoe RST, and trailers to tow the Z06 and boat around.

If I can get some PDR data of a fast driver with an SC 757 at VIR I'll try to compare them, but based on the one time I got to drive a student's car it didn't feel significantly faster. Now I wasn't driving it very hard either because it wasn't my car.
However, look at the VIR videos that Chevy has released of the ZR1 and the Z06. Even if you ignore the downforce and cornering speed improvements the ZR1 is going to destroy the Z06 on the road course. I don't know how much of that is motor, how much is the trans, and how much is aero but the ZR1 is pulling huge speed deltas of 15-20 MPH on the Z06 in the straights. This is going to be far more than a Z06 with an extra 100 HP.

If can you afford to buy a ZR1 and then buy a C8 a year or two later, then get the ZR1. If not, wait for the C8.
