New Mobil 1 0w-40
I have a 2017 Z06 with a little over 12,000 miles on her. I have heard that GM recommends Mobil 1 0w-40 on the new Z06. Should I change to 0w-40 at my next oil change or stick with the 5w-30. Will doing that affect my warranty?

I still use 5W-30. It was the GM recommendation prior to their deal with Mobil on the 0W-40.
I plan on using the 5W-30 (Street) and 15W-50 (Track) for the entire ownership of my car. I firmly believe this is the ideal oil setup for the LT4.

At my next oil change I will have them put the Dexos2 0W40 in the engine. That way I have one oil that is approved by GM for both street and track duty.

Does anyone know the price difference for the two oils at the dealer? I asked my Corvette tech what he would put in when the time came for my first oil change (not free, mine is a 2016), and he pointed to a stack of Mobil 1 5W-30 boxes. From that I assume that only the 2018's and up would get the 0W-40, unless I wanted to pay extra. I did not ask any further as I had to leave.

No question - use the new 0-40 ESP oil - not the previous European 0-40 which I used in my C6 Z06.
First of all a 0 weight oil pumps quicker when the engine starts cold. Keep in mind that about a third of the wear on any engine is incurred in during start-up. Next, a 40 weight oil is thicker at the higher operating temperatures, providing greater support between the metal surfaces. Then keep in mind that weights are only one aspect of the oil structure, this new one is a different chemical formulation that GM states suffices for both street use, and track use.

I suppose either viscosity would work, I would use what is recommended in your owners manual

I read that the new formula 'ESP' oil will have less oil consumption & not gum-up the intake valves as much.

To the OP, it is Mobil not Mobile. It is a product or the ExxonMobil Oil Corporation. I also find it rather odd that people would balk and be upset if the cost of the better product is a few dollars more when you look at the initial purchase price of the vehicle.
People have gotten hung up on this oil thing. As long as it meets the specs in the owner's manual any quality product should be fine unless you are running the vehicle in a competition environment..

I've had mine on order with gmpartsdirect for 8ish months. Most of the big online companies show it as discontinued not available for order etc etc. I asked them a couple weeks ago and they said they had no eta

I walked in at my local Chevy dealer parts dept and bought it there. It's widely available now. I've seen it on eBay and Amazon. There are others. You shouldn't have any problems finding this stuff.

I gladly switched to it. Nice to have a single oil for both street and track.
