Who to trust changing tires with carbon ceramic brakes?
I’ve called a bunch of local shops and multiple said they won’t chip the ceramic brakes but just wanted opinions on who people go to?

I am only using my dealer. i expect them to own up to it if a mistake happens. Just z51 stock tires and wheels are heavy buggers; i would break a rotor trying to wrestle a z07 rear tire/wheel off the car.
But if you must, a forum vendor is machining a very long spindle that screws on and slides the wheel out of harms way to the disk when mounting/dismounting. My brother bought one for his z07 and loves it.

I would stand watch over the tech removing the wheels and make sure the rotor protectors are properly in place. That way you know for sure.

The fragile nature of these rotors is so over-dramatized on the forums. They're not made of sand and it's very unlikely anybody will hurt them if they're remotely careful with the wheels. I've swapped me wheels and tires 100 times, many at the track on jack stands, and never chipped a rotor once. I've never once used the stupid foam pieces and I have 18" wheels, which is a much tighter on/off procedure than stock sizes.
Bottom line is not to lose sleep over it and just ask them to be careful.
