Look on ebay for a C8 Service Manual. It 7000 pages, but it does have sections that actually are called description and operation which explains, to some extent, what the modules do and the various communication signals that pass among them. It takes a little work ferret out the details. There are also official sources for the manual. They will be much more current - probably less errors. I find what I think are errors, omissons, and sometimes generic descriptions in the ebay version I have.

This video shows the location of most of the modules, but there are literally hundreds of sensors, probably hundreds of actuators, many buried inside the engine and DCT. I doubt anyone outside of GM could provide a complete list of them.
