I’m painting my brake calipers today. I don’t have any special jack or stands. I do have two jacks.
question: on the c8 convertible can I jack just one tire at a time? Or front and rear left side at a time for example? I know with older vettes I couldn’t/shouldnt do it.

The whole side will lift off the ground.
Having 2 jacks, one in back of front tire and the other in front of the rear tire, on the same side.
Using the 2 jacks will backup the other. No jack stands required.
Do one side at a time, both front and rear calipers.
Take your time and enjoy your project.

Just jacked mine recently to change wheels. You can lift one wheel at a time. If you lift one wheel high enough it will lift both wheels off the ground that side.

Yeah…NOT! Talk about getting maim for life. In fact you are completely irresponsible to ever suggest anyone should follow this horrible advise!
Any response to the contrary is even more irresponsible.
Maybe its the pilot in me as every plane I flew ALWAYS had a backup system in case of failure.
Bad advice? If you notice in the picture my jack is locked in place by using a jack rod for safety. The weight of the car is not being held up by the jack. I answered the OP question, "can I just jack one tire at a time". It is a fact that both wheels on the lifting side will come off the ground when you do. The OP will have to decide what jacks and jack stands he will use.
If you use the rear round hole (the on that says Don't Use in post #3) you can lift the whole side of the car with one jack and place jack stands in the official lifting location. The rear tire will leave the ground about an inch before the front tire. You should use a jacking puck with a locating feature in the hole if you do it this way. Spring Mountain uses the round holes to lift the car using a jack.
You don't want to use the round holes if you are using a 2 post lift because the CG could shift and the car could fall of the lift but this won't happen with two tires on the ground.
Option to Quick jack, save about $400. and get these from "Vevor".

I agree, using a single hydraulic jack without any safety mechanism is a disaster waiting to happen. Also the wheels touching the ground are choke to prevent the car from rolling.
I have a scissor lift that I use if I need to get the entire car off the ground. But to raise one wheel, I use a hydraulic with a safety mechanism and wheel chokes and it is safe.

It's the 5000# one. It just reaches the jack points but you can add the 11" extension plate (provided) if you want. Yes it lowers to keep under stock car. It is solid if you compared to the one leg QJ but heavier. Here is the review:https://www.corvetteforum.com/forums...-car-lift.html
I have had no issues lifting the C8 with the Quickjack 'facing' in either direction. The direction was chosen based upon what I was doing after the lift.
There is no problem even when you use them across the C8 - sideways that is.

Im glad I got the Vevor now. It lifts straight up and use it either way. When I first got it, I didn't check to see if all safety locks were in place. The lifts have 2 locking devices, one on each end of each lift. One did not secure at rear (engine side).. I tried to lower car and when I realized it wasn't going down properly, I corrected it, If this was the QJ, with only one leg support per side- VAVOOOM! It would have racked like several on utube (even though its operator error and rare). Thanks
