I saw a thread on here from Apsis with a really nice looking two-tone red / black air bag cover with red stitching. I've sort of hated the rubber cover on my 2LT since I bought the car, and that thread motivated me to finally do something about it. Not cheap, but worth it to me.

Comparison old and new. The black on the new is Alcantara, to match the microsuede on my steering wheel.
New installed. After disconnecting the battery and waiting about 20 minutes or so to be safe, the whole process probably only took 15 minutes. Instructions in a video from Paragon Performance about installing a new steering wheel.
The quality is great. The color is interesting. In the shade it's a perfect match for the OEM. In the sun it's not as yellow as the OEM. But the difference is small, and since it's not right next to the OEM you don't really notice the difference. The leather ring on the top of the steering wheel doesn't really match the rest of the interior, either. Probably dirt.
