My Vett has plenty coats of z2,z5 on it, but it is time to claybar, and put some number 1 back on it, and start process over.

Should I use dawn and remove the existing zaino or can I just wash with zaino car wash, claybar, then z1,z2, etc.
I thought i read where I could just wash, claybar, and start but wash with zaino and not dawn.

dawn won't remove the Zaino - so you can just go ahead and use Z7. :seeya

Yup, no reason to try and start over. :D

You really do not ever start over, Dawn is never used after again after your first coat of Zaino. Use the z-1 once per 6 months and just wash with the Z-7, clay the areas you want to, appply the z-1 and either Z-2 or Z-5 on top and wipe off when dry.
