Default 02 sensor delete

First, let me say I am new to the Forum so I apologize if I am just unable to locate the answer in a previous thread. I am still learning to navigate the page.

My plan is to run side pipes on my 1981.
I am curious about how much impact the o2 sensors had and if I should reattach them or just get a simulator to "trick the computer"
I dont want the CEL to come on but would like to keep it simple.
Any advice would be greatly appreciated

If you want to keep it simple keep o2. If you choose to lose o2 I would ditch the ccc entirely. 81s are particular with everything working.

I will have to do some reading before I go that deep. I did already remove smog junk and cleaned up the engine bay a bit.
