I find electric stuff hard to be excited about but one day I can for sure see EV resto mods being a thing. I think internal combustion cars will always be part of the hobby, but I can see where in the future there may be a whole lot of aftermarket support for EV resto mods.

Oviously the biggest issue is the weight and packaging of the batteries. And a lot more development will need to happen before the battery aspect will be feasible on anything other than large trucks and SUV's where you can throw the battery in the bed, figuring out the packaging in a vintage Corvette is a while other ball game.
