A little more info is needed. What size tires? Which transmission, Z06 or ZR1? What is the RPM at which peak HP occurs? Where are you making the top speed run?

Weight isn't really a factor in top speed runs unless you're limited in the length of the track. Of course aero is a big deal. I think I remember seeing the dyno sheet a while back and your peak HP occurred at ~6400 RPM. You'll be past 6400 RPM at 225 MPH in 5th gear (Z06 or ZR1 transmission) with stock tire size and 3.42 rear end ratio. A 3.90/4.10 won't even be in the ball park. You might want to try a taller tire or go to 6th and juggle the rear end ratio/tire/transmission ratio. If you're at Bonneville, you'll have to account for tire slip on the salt flats.

We have a 660 HP E85 Katech motor we are going to run top speed, and are looking for gearing advice. You are the man. The stock Z06 tranny has a taller 5th gear than the ZR1 for starters, but we were thinking of changing the rear end to 3.90 or 4.10 to allow 5th gear to run to 225mph.

We have the aero changes in the works, with the weight at 2850.

Any advice would be greatly appreciated.
