I have the above highlighted setup and run 205 low speed ON and 215 high speed ON. I have tried lower stats and lower turn on temps and largely because of the Maggie ( huge heat generator even if not in boost) and the fans are constantly on at speeds below 35 MPH. I prefer not to have the fans always running and I have found for my setup that a 180 stat and 205 ON for low speed avoids the fans being on except in the hottest of weather. Engine temp in normal driving on the highway is 195 plus or minus a degree or two. In traffic the temps are around 202 plus or minus a degree or two. When low speed fans do come on temps quickly drop back under 200. I'm satisfied with that operation on my car.

At higher speeds on the highway or track the engine temp drops to under 190 even with the maggie in boost. Suspect that the increased air flow through the radiator is responsible for the drop.
