whats a normal engine temp normal driving
 
just bought a 2001 stock coupe w/manual. I`m running 210-220 with normal driving conditions in hot South Carolina. Do those temps sound about right.

Yes, thats about right with hot conditions for me. Highway a little cooler when you're moving along, 190-200ish.

Last week I put in a new thermostat 186dg and a new radiator cap, AC Delco 18psi. I run 195dg on the highway and never go over 205 in stop and go driving in Hot Myrtle Beach, SC. There was a time when I was running 220 and above all the time except for the open road. The new thermostat and cap fixed the high temp.

Coolant or oil?

Those temps are not an issue. If you haven't cleaned the rad recently, do so - compressed air back to front through the fins - but otherwise your temps are okay.
