I prefer Black interiors with contrasting stitching, so the dipped interiors that are color is a bit too much for my taste. I get why some people like them though.
I was going to get blue and red dipped. I'm a little bothered about it because I was going to do it even before they made a spectacle out of it with the press car. I might switch to white and red dipped, Which kind of sucks because I have a Porsche in that color. My wife likes admiral. I liked the discontinued blue better to be honest. And I like rapid blue better then that. I liked Sea Wolf and Cacti too. All the colors I like get discontinued. I guess I have a few weeks to decide.

I would have been all-in on the "blue-dipped" interior, but it bugs the crap out of me that they had to go and give it red stitching/belts/wheel stripe. The other "dipped" interiors are all single color, why'd they have to screw up the blue one!
The red added to the blue interior bugs me, also. I was planning on the 3LT with the blue-dipped interior, since, for some reason, there's no blue interior for the 2LT, unless I overlooked it.

I think the best you can do @ 2LT would be black interior (leather or leather/suede) with blue stitching and blue belts.
I like the red dipped interior, but if I ordered it again, I would definitely go with the level 2 CF, competition seats, and black floor mats to break it up a bit.
Level 1 is just the cluster surround and switch plate areas; Level 2 adds a lot more on the center console and door panels up onto the dash. Here's a couple pics I had handy from my Santorini research:
