Is it for competition or just general tracking like HPDE? Do you have to use them on the street as well or do you have a dedicated set of wheels for track only?
If you're talking just going as fast as possible, 295/315 Hoosier A7's are my vote. I've had good luck with the Re71R potenza's but mine are on smaller wheels too.

I agree. I run Hoosier A6's in these sizes for track (295's square for Autocross) A7's will last longer than my A6's.

I'm not familiar with those tires, and I'm not finding a 265-18/325-19 combo anywhere. That may be the limited stock you mentioned, and his 265/325 recommendation may be because that's all he has left that will fit your wheels, and he wants to sell you tires.
I think a 265/325 combo sounds like a recipe for understeer. I'd keep the split closer like 295/315 or 315/325-335.

You might want to be real careful with those 19x12's. The 19x12's I've seen on a 14 Z51, interfered with the spring with the suspension unloaded. You might want to look at that as I know a guy who's engineering a solution for that issue. We couldn't actually put the wheels on the car without loading the suspension some what.
Fwiw, we just mounted 295's and 315 A7's because the 275 fronts resulted in a little too much under steer.
