I just had my front and rear speakers replaced as well as an amp and a clean sweep....I was told that the rear cannot be change to stereo without affecting the fade of the front and rear speakers....is this true???

Most likely what they are trying to do is run the entire front speaker set up (2 front and 2 rear) off of 2 channels of the amp. Then they will bridge the sub into the 2 rear channels of the amp (or run each voice coil to the the 2 rear channels of the amp).
When doing this you lose the ability to use the fader because if you fade to the front the bass will decrease in volume if you fade to the rear you turn both the front AND the rear speakers down in volume.
So you can either have more "stereo" from all 4 speakers or more "bass" from the sub.
